Roast the cumin, coriander and cardamom in a dry pan until they release their aroma. Transfer to a mortar and mash.
Heat 1 tablespoon olive oil and 20 grams of butter in a pan. Fry onions in it with a generous pinch of salt for 4-5 minutes until soft. Add garlic, ginger, turmeric, garam masala and spices.
Peel and slice an apple, add it to the pan along with the parsnips, broth and 1/2 teaspoon of water. Bring to a boil and then reduce to a low temperature to simmer under a lid for 40-45 minutes until the parsnips are completely soft.
Remove from the heat and blend the soup.
Cut the second apple into thin slices. Heat the remaining 1 tablespoon of olive oil and 20 grams of butter in a pan. Add the sugar and when it melts, fry the apple slices - caramelize for 1 minute until golden.
Serve the cream soup with a few slices of caramelized apple, sprinkle with parsley and add the creamy fray to finish (you can replace it with cream).
