Peel and cut onions into semicircles, cut the pepper into two parts and remove the seeds. Grease a pan with olive oil, put the vegetables in it, cover them with aluminum foil and bake for about 25 minutes in the oven.
Boil the fresh potatoes, peel them and cut in half. Boil the eggs as well, peel them when they have cooled enough and turn them into small cubes.
Peel a squash, grate it and chop finely. Do the same with the garlic cloves and roasted onions.
Mix the mayonnaise / yogurt with the tomato sauce, add the garlic, ginger, chopped dill and curry. Beat with a blender until smooth.
Mix in a bowl the potatoes, onions, peppers, boiled eggs and season the salad with the spicy dressing.
