How To Cook Spicy Pumpkin Sauce With Tomatoes And Oregano (for Meat) - Recipe

Required products :

  • 700 grams of chopped pumpkin (pre-cleaned of seeds and peeled)
  • 3 fleshy tomatoes
  • 1 large red sweet pepper
  • 5 cloves garlic
  • 1 red hot pepper (cayenne)
  • 1 full teaspoon grains of aromatic cumin
  • 1 teaspoon lemon juice
  • freshly ground black pepper, a pinch of dried oregano, salt

Method of preparation :

Stew the pumpkin in a saucepan with a little water (until ready). Then drain the liquid, leaving some of it. Mash the pumpkin until smooth.

Boil the tomatoes with boiling water for a few minutes, peel their skins and cut the flesh and peppers. Add them to the puree, season with salt, crushed cumin seeds and ground pepper (black).

Cook for 15 minutes, then add the crushed garlic cloves. If the liquid is not enough, add the pumpkin decoction as needed to get the desired consistency.

 Next, cook for another 10 minutes and beat the sauce with a blender.

It should boil again, then add lemon juice and turn off the heat.

 

Once cool, you can serve with meat, fish, or just hotcakes.
