Required products :

1.5 liters of vegetable broth or water

150 grams of red lentils

50 grams of bulgur

1 onion

2 medium carrots

2 - 3 cloves of garlic

1 tablespoon tomato paste

1 teaspoon hot red pepper

1/2 teaspoon coriander

1/2 teaspoon cumin

1/2 teaspoon salt

3 - 4 tablespoons olive oil

parsley

chili powder to taste

serving cream

Method of preparation :

Peel the garlic and onion, chop finely. Grate the carrots on a fine grater, crush the spices if they are grains.

Pour the broth into a saucepan and when it boils, pour the bulgur into it. Stir, reduce heat and simmer for 5-7 minutes. Meanwhile, fry the garlic and onion in olive oil until transparent, add the grated carrots, spices, tomato paste and stew everything for a few minutes. Then pour the lentils into the broth, add the stuffing. Allow the soup to boil for 10-15 minutes (or until the lentils are ready). Finally, season with salt and chili powder. While the soup is boiling, finely chop the parsley (fresh), put some of it in the lentils, and mix the rest with the cream.

Arrange the dish in suitable plates, garnish with a spoonful of cream and serve.
