Required products :

  • 1/4 tea cup olive oil
  • 1/4 tea cup butter
  • 12 crushed garlic cloves
  • 2 bay leaves
  • 4 sprigs of thyme
  • 3 tablespoons sherry wine
  • 1 tablespoon paprika
  • 1 teaspoon Worcester sauce
  • 1/2 teaspoon salt
  • 500 grams of shrimp - cleaned
  • 1/2 teaspoon hot sauce if desired
  • 1/4 cup chopped tomatoes
  • 3 slices of bacon, fried
  • 1-2 tablespoons cream
  • 1 cup cornmeal
  • 1/4 tea cup whole milk
  • 3 tablespoons butter
  • 1/2 cup grated cheddar
  • salt, pepper
  • green onions, parsley

Method of preparation :

In a large cast iron skillet, place the olive oil, butter, garlic, bay leaf and thyme. Melt in the heat and add sherry wine, paprika, Worcestershire sauce and salt. Put the shrimp and stir. Add the hot sauce, tomatoes, bacon (diced) and cream. Cook for about 3-5 minutes, until the shrimp turn pink.

Boil the semolina according to the instructions on the package, adding milk, butter, cheddar and season with salt and pepper.

Garnish the portion with green onions and parsley, put shrimp on top of the semolina, along with some of the sauce in the pan and serve with lemon slices.
