How To Cook Spicy Stuffed Peppers With Beans, Spices And Cheese - Recipe

Required products :

  • 6 large green peppers
  • 2 tablespoons olive oil
  • 1 onion
  • 2 cloves garlic
  • 2 hot jalapeno peppers
  • 1/2 red pepper
  • 1/2 cup chopped fresh coriander
  • 1 teaspoon cumin
  • 800 grams of roasted canned beans
  • 1 to 3 teaspoons hot sauce (to taste)
  • 300 grams of Monterey Jack cheese

 

Method of preparation :

Cut the peppers lengthwise (to get stuffing boats) and clean them of seeds.

Finely chop the onion, red and hot peppers, squeeze the garlic.

Heat 2 tablespoons olive oil in a pan. Add onion, garlic, jalapeno pepper, red pepper, coriander and kimono. Cook over medium heat until onions are browned (about 4 minutes).

Remove the pan from the heat, add the beans and hot sauce, add some of the cheese.

Season with salt and pepper. Fill the boats with the resulting mixture and sprinkle them with the remaining cheese.

Roast the peppers on a closed grill for 30-40 minutes.

If you prefer, you can cook the peppers in the oven.
