Required products :

  • 4 tablespoons olive oil
  • 1 small onion, finely chopped
  • 1 clove of garlic, grated
  • 6 cm ginger root, grated
  • 1 bay leaf
  • 1 teaspoon black peppercorns
  • 2 star anise
  • 1/2 teaspoon hot pepper flakes
  • 500 grams of cherry tomatoes
  • 4 tablespoons vinegar
  • 3 tablespoons brown sugar

Method of preparation :

Heat olive oil, add onion, garlic, ginger, bay leaf, black pepper, star anise and pepper flakes. Fry for 10 minutes, stirring occasionally.

Cut the cherry tomatoes into quarters and place them in the pan. Season with salt and sugar, add vinegar. Cook until the tomatoes fall apart and the sauce thickens.

Pour into jars and store in the refrigerator. Before consumption, remove all spices - anise and bay leaf.

If you wish, you can sterilize the jars to keep the tomatoes longer. To do this, you must wash the glassware well and dry them in an oven at 140 degrees for about 10 minutes. Then spread the sauce in them and boil for 10 minutes to vacuum the caps.

Another storage option is in the freezer.
