Delicious pasta with cheese may sound like an oxymoron, but it's really great how this recipe recreates the taste of cheese by replacing it with vegan products. Edible yeast is your best friend. If you are vegan, you certainly know everything about edible yeast. This delicious bowl of pasta with a pleasant nutty taste will satisfy you for a long time.

Required products :

  • 2 tablespoons extra virgin olive oil
  • 1/2 cup breadcrumbs
  • 2 teaspoons fresh thyme leaves
  • salt and ground black pepper to taste
  • 450 grams of pasta in the shape of shells
  • 1 tablespoon coconut oil (or vegetable)
  • 1 onion, chopped
  • 1/2 medium yellow pepper, cut into cubes
  • 1 teaspoon ground mustard seeds
  • 1 and 1/2 cup raw porridge
  • 1 red potato, peeled and diced
  • 3 and 1/2 cups water
  • 2/3 cup sauerkraut strained through a sieve
  • 3 tablespoons edible yeast
  • 1 tablespoon white wine vinegar
  • 1 tablespoon hot sauce

* A tea cup is used to measure the quantities.

Method of preparation :

In a large saucepan with salted water, boil the pasta al dente for about 9-10 minutes, then drain.

In a medium skillet over medium heat, heat the olive oil. Add the breadcrumbs and thyme and season with salt and pepper. Cook, stirring occasionally, until the breadcrumbs are golden, then transfer to a bowl to cool.

Heat the coconut (or vegetable) oil in a large bowl over medium heat. Add onion and pepper and cook until soft.

Season with salt and pepper, then add the ground mustard seeds and cumin and cook for another 1-2 minutes. Add the cashews, potatoes and water and bring to the boil. Cook until the potatoes are soft, then pour into a blender and puree until smooth. Add sauerkraut, edible yeast, white wine vinegar and hot sauce. Puree again until smooth, then season with salt and pepper if necessary.

Mix the cooked pasta with the blended sauce in a large bowl and stir. Serve by sprinkling with the breadcrumb mixture.
