Required products :

1 teaspoon buckwheat flour
1/3 teaspoon cornmeal
1 teaspoon baking powder
3 teaspoons flaxseed
3 eggs
1 teaspoon skim yogurt
200 grams fresh spinach leaves
2 grated carrot
1 grated onion
1/2 lemon
garlic to taste
Indian nut to taste
salt and pepper to taste
pumpkin seeds for decoration

Preparation :
Preheat the oven to 180 degrees.
In a large bowl, mix the dry ingredients (both types of flour, leavening agent, flaxseed, spices).
In a separate bowl, beat the eggs with the yogurt, add the chopped spinach, grated carrots and onions, garlic (crushed or finely chopped), juice and lemon zest. Stir. Combine the two mixtures.
Divide the dough into muffin tins and sprinkle with pumpkin seeds.
Bake in the preheated oven for about 25 minutes.
