Turn on the oven to preheat to 170 degrees. Grease a form with oil and cover its bottom with parchment.
Mix the spinach and oil in a blender bowl, add the lemon juice and grated citrus peel, then beat everything, but let the pieces of leaves remain (do not turn into a pulp).
Beat the egg with the sugar (including the vanilla) for about 5 minutes. Add the spinach mixture to this combination and beat once more on low speed.
Pour the baking powder into the flour, sift and combine the two mixtures. Stir with a spatula, but do not overdo it, because the dough will lose its airiness.
Distribute evenly in the prepared form and bake the marshmallows until ready in the already preheated oven. When removed, allow to cool on a wire rack.
Meanwhile, make the cream by whipping the liquid cream with the mascarpone (the latter can be replaced with ricotta), the powdered sugar and liqueur of your choice (match the aroma and taste to the spinach).
Cut the finished loaf horizontally into 2 parts, which are glued with cream.
You could sprinkle with powdered sugar, you will get a bright contrast to the green spinach color.
Garnish with fruit of your choice and serve.
