Learn how to cook "Spinach casserole with chickpeas and cashews". Delicious recipe.

Required product and:

For the pasta (for 1 serving):

170 grams of chickpeas (pre-soaked in water overnight)
1 bay leaf
1/2 teaspoon grated lemon or orange peel
15 grams of oil
1 tablespoon oil
1 grated onion
2 crushed garlic cloves
1 bouquet of garnishes (spice mix: bay, parsley, thyme)
220 grams of cashews
1 beaten egg
1 teaspoon thyme leaves
1 teaspoon ground coriander seeds

About the casserole :

1 serving of chickpea paste
4 tablespoons broth of your choice
100-120 grams of spinach (fresh or frozen)
cheese, yellow cheese, preferred fresh green spice or a favorite sauce to serve

Method of preparation :

Make the paste. Fill chickpeas with water, add the bay leaf, the bouquet of aromatic spices and put on the stove to boil. When this happens, reduce the temperature and let the beans cook for an hour (or until soft).

Fry the onion and garlic in the oil (you can use olive oil) for a few minutes, until golden.
Using a blender, puree the chickpeas, grind the cashews until you get flour. Mix the two products and add onion and garlic, coriander and thyme. Add the lemon zest, butter and egg. Mix everything until smooth.

You should stew the frozen spinach until the liquid evaporates, if you use fresh - stew it in a few tablespoons of olive oil until soft.

Preheat oven to 190 degrees.

Cover with parchment appropriate shapes.

Pour the broth into the resulting chickpea paste and add the spinach. You can supplement with yellow cheese or other preferred additives, if desired.

Distribute the mixture in the prepared dishes and bake the dish in the oven for about 45-50 minutes. Once the casserole is ready, wait 10 minutes and then turn in another bowl.

Serve with your favorite sauce, cheese, yellow cheese or green spices.

Enjoy your meal!
