How To Cook Spinach Casserole With Mushrooms, Ricotta And Mozzarella - Recipe

Required products (for 2 servings) :

  • 2 mushrooms
  • pinch of salt
  • 2-3 tablespoons olive oil
  • 500 grams of spinach
  • 1 teaspoon dried thyme
  • 1 egg
  • sol
  • 2 pinches of black pepper
  • 1 onion
  • 2 cloves garlic
  • 120 grams of ricotta
  • 60 grams of mozzarella


Method of preparation :

Put the mushrooms in a pan, sprinkle with olive oil, sprinkle with salt and pepper, place in the oven (top baking) for 5 minutes, then turn the mushrooms and leave in the appliance for another 5 minutes.

Remove them, switch the oven to normal to preheat to 210 degrees.

Heat 1 tablespoon olive oil in a pan over medium heat. Fry the finely chopped onion in this fat until it softens and starts to turn red (about 5 minutes). Then add the spinach, finely chopped garlic, thyme and fry for about 2 minutes.

Remove the pan from the heat and allow the vegetable mixture to cool completely. Once this is done, transfer to a bowl, add the ricotta, egg, half of the mozzarella (grated), 1/4 teaspoon of salt, a pinch of black pepper and mix everything.

Take two pots or other suitable for making two separate portions of the dish. Put a mushroom in each and spread the mixture of vegetables and cheese.

Sprinkle with the remaining mozzarella and bake for 10 minutes. Then turn on only the top rack of the oven again and leave the dish in it for another 10 minutes in the oven to redden its surface.
