If you use frozen spinach, defrost it first. Peel a potato and cut it into large cubes, put in a saucepan, pour water, add the bay leaf, salt and cook until done.
Then remove the bay leaf, drain the water, leaving some of it in the bowl. Add the spinach to the potatoes, season and mash. Pour the cream, stir and distribute the soup in bowls.
Serve with a garnish of chopped fresh green spices of your choice and crispy croutons.
