Turn the oven to preheat to 175 degrees. Meanwhile, melt the butter in a pan over high heat. Put the spinach in the boiling fat and stew for 30 seconds. Then take the leaves out on a plate, squeeze them well and cut.
Beat all eggs with a wire whisk, season to taste.
Fry the bacon over medium heat in the pan in which you stewed the spinach. Fry the bacon for about 5-8 minutes, turning the pieces until they are covered with a crispy crust. Then reduce the temperature and add the chopped onion. Add a little salt and stew both products for 5 minutes, until the onion is transparent.
Turn off the heat, pour the spinach with onion and bacon in a pan, pour over the beaten eggs and sprinkle with the crushed cheese (you can use feta).
Place the dish in the preheated oven and bake the omelette for 10-15 minutes. If you want a golden crust on the surface, let the last 2-3 minutes of baking be on the grill function.
