If you use frozen spinach, defrost it first. Fresh clean, chop finely. Whatever you prefer, grind in a blender until smooth.
Add the oatmeal (you can replace them with oatmeal, flaxseed flour or buckwheat flour), beat the eggs, pour the milk, a little vanilla and baking powder. Beat once more and you will have a green pancake batter.
Sweeten it with honey to taste and bake thin pancakes that do not overcook, it is important to keep their color.
Use your favorite vegetables for the filling. In this case, this is a pumpkin that goes well in color with spinach pancakes. Cut it into pieces and stew until ready, adding curry, black sesame seeds or cumin seeds.
