How To Cook Spinach Puff Roll With Ricotta - Recipe

Required products :

  • 2 teaspoons olive oil
  • 1 onion, finely chopped
  • 10 grams of fresh thyme leaves, chopped
  • 350 grams of frozen spinach
  • 250 grams of ricotta
  • 60 grams of grated hard cheese
  • a pinch of nutmeg
  • peel of half a lemon
  • 2 eggs
  • 2 sheets of 400 grams of puff pastry
  • poppy seeds for sprinkling

Method of preparation :

Preheat oven to 200 degrees. Line two baking trays with baking paper.

Fry the onion in olive oil for 10 minutes until soft, adding the thyme leaves in the last 2 minutes. Transfer the mixture to a large bowl.

In the same pan, heat the spinach, and at the end of cooking, drain the excess water.

Add the spinach to the onion, add the ricotta, nutmeg, lemon zest and one egg. Stir to combine ingredients.

Sprinkle with a little flour kitchen counter and roll out a sheet of puff pastry. Cut it in half lengthwise and spread 1/4 of the mixture on each rectangle, leaving 2 cm on one end of the long side without stuffing.

Roll up lengthwise.

In the same way, form another roll, and prepare the second sheet of puff pastry following the steps above.

You will receive 4 long rolls. Beat the second egg with a little water and spread the puff pastry rolls, sprinkle generously with poppy seeds.

Cut each roll into 3 equal parts and transfer to the prepared trays. Bake for 25 minutes until golden and crispy (if you need to bake the rolls in portions, store the latter in the freezer while baking the former).

Serve hot or cold with sauce as desired.
