Fill the mushrooms with boiling water and leave them in it for an hour. Blanch the spinach for two minutes in boiling salted water, remove with a slotted spoon and immediately place in a bowl of ice water, then drain thoroughly.
Separate the egg whites and yolks of the eggs. In a blender, beat the spinach with the yolks, 1 tablespoon of cream cheese and flour. Transfer the mixture to a bowl.
Separately beat the egg whites with a pinch of salt to obtain a thick foam, which you add to the spinach mass.
Cover a pan with a sheet of parchment, spread the "dough" on it, flatten it and bake for a quarter of an hour at 190 degrees.
Cut the onion into thin semicircles, drain the mushrooms from the water and cut into large pieces.
Pour the onion into a bowl with a small amount of hot oil and fry for five minutes. Then add the mushrooms, after another 5 minutes remove the pan from the heat and allow the mixture to cool slightly. When this happens, add the cream, season and stir.
Remove the pan from the oven, sprinkle the spinach base evenly with grated Parmesan cheese and cover with a second sheet of parchment. Turn the form over on the hob and remove the paper that covered the bottom of the dish earlier.
Spread the cream cheese on the base, spread the mushrooms on it and roll it up. Put it in the refrigerator for 8-10 hours.
Then cut into pieces 2-3 centimeters thick and serve.
