Required products :
500 grams of fresh spinach
50 grams of raisins
2 slices of white bread
3 tablespoons olive oil
25 grams of pine nuts (and / or walnuts)
2 cloves garlic
salt and pepper
Method of preparation :
Pour boiling water over the raisins and let them soak for 10 minutes. Clean the spinach from the stems, wash it and let the water drain.
Cut the bread into cubes (you may not use white, but wholemeal or whatever you prefer). Fry them in 1 tablespoon of olive oil until golden brown, then place on a paper towel to drain off excess fat. Roast the pine nuts in the same pan.
Drain the water from the raisins, dry them. Cut the garlic and fry it lightly in the remaining 2 tablespoons of olive oil. Add the nuts to the garlic, stir and immediately pour in the spinach. Stew everything for about a minute, stirring. Spinach should soften a little, do not overdo the stewing.
Pour into a suitable bowl, add the raisins and mix everything well. Arrange the salad on a plate, put the croutons, spices, stir again and serve immediately.
