Required products :
400 grams of spinach (fresh or frozen)
50 grams of yellow cheese (parmesan)
200 milliliters of cream
50 grams of walnuts
15 milliliters of lemon juice
2 tablespoons olive oil
1 clove garlic
100 grams of pasta or potato gnocchi (balls)
100 grams of cold-salted or salted salmon
salt to taste
Method of preparation :
Wash the spinach and put half of the leaves in the blender together with the garlic clove and walnuts. Add salt to taste, pour lemon juice, olive oil and puree (whichever is coarser). Then add half of the parmesan / yellow cheese (grated) and leave the mixture for a while.
Pour the cream into a small saucepan and pour the remaining spinach, chopped and cook for 5 minutes. Then grind with a blender and pour over the puree. Add the remaining yellow cheese / parmesan (leave a little for decoration).
Cut the salmon into small cubes, add them to the sauce, and pour the potato balls. Mix everything, sprinkle with grated Parmesan cheese and serve immediately.
