In a large shallow saucepan, pour olive oil, heat it and pour the onion. Cook over medium heat for about five minutes, then add the garlic and a minute later reduce the heat. Sprinkle with sugar (optional) and let the mixture fry for another 15 minutes or until it acquires an amber color. Then add the spinach, spices and pour the cream. Stew for 4-5 minutes to evaporate some of the liquid and thicken the sauce.
Wait a while before serving, so the consistency will thicken even more.
