Required products :

400 grams of fresh or frozen spinach
250 grams of rice
1 onion
20 grams of butter
3 eggs
50 grams of parmesan (you can use another type of cheese / yellow cheese)
salt and ground black pepper to taste a
little grated nutmeg a
handful of breadcrumbs

Method of preparation :

Put the frozen spinach in a saucepan, close it with a lid and place the dish on the stove for 10-12 minutes to thaw the leaves and soften. Then drain the juice, let the spinach cool a bit and squeeze to remove excess liquid. Cut it into small pieces.

If you use fresh spinach, scald it and then chop.

Boil the rice in salted water for about 10 minutes and drain the water.

Finely chop the onion and fry it in hot oil with a pinch of salt until soft and red.

You should mix the rice, spinach and onion prepared in a suitable deep bowl. Once the combination has cooled, add the lightly beaten eggs, season with salt, ground black pepper and nutmeg.

Grease the bottom and walls of the pan with oil, sprinkle with breadcrumbs and spread the mixture. Press to the bottom with a spoon. Sprinkle with grated Parmesan cheese.

Bake the dish in a preheated 200 degree oven for 20-25 minutes until it becomes thick and the surface turns red.

When you turn off the oven, let the casserole stand in it for another 5 minutes and then remove.
