Necessary products:

 

  • 1 kg of lamb leg meat
  • 1 tablespoon lard
  • 100 grams of bacon
  • 2 carrots
  • 1 parsnip root
  • 12 arpajika
  • parsley
  • 1 bay leaf
  • 1 pinch of oregano
  • 150 milliliters of dry white wine
  • 200 milliliters of broth
  • pinch of salt and pepper
  • vinegar

 

Method of preparation:

 

Peel an arpajik, rinse and dry. Do the same with the carrots, parsnips and cut into pieces. Heat a dry pan over low heat, toast the finely chopped bacon, drain and set aside.

Melt the fat, fry the lamb, add the arpajik, carrots, parsnips, parsley, bay leaf, oregano and pour the wine, broth and 2 tablespoons of vinegar.

Season with salt, pepper, and pour the mixture into a clay pot. Preheat the oven to 170 degrees, put a lid on and cook for two hours. Cool, pour portions, and serve!
