Required products :

  • 120 milliliters of fresh milk
  • 60 grams of butter
  • 1/2 teaspoon salt
  • 125 grams of flour
  • 2 eggs - lightly beaten
  • 125 grams of cheese for pizza - cheddar or ripe mozzarella
  • 25 grams of finely grated Parmesan cheese

Method of preparation :

Heat the milk and butter in a saucepan until the milk begins to form bubbles and the butter melts.

Remove from the heat and add the flour to the warm liquid and stir with a wooden spoon. Once the liquid is absorbed by the flour, return to the hob and stir for about 2 minutes to form a ball. Cool for 3-4 minutes.

When the dough is cold enough for you to touch it with your hand, season with black pepper, add 1/4 of the beaten eggs, stirring well to combine the products. You should add another 1/4 of the mixture and stir again. So add the whole amount of eggs in portions.

Mix the two types of cheese (cheddar and half of the parmesan) and combine them with the dough. Transfer to a bag whose end you cut.

Form about 2 cm balls of dough in a tray lined with paper. Sprinkle with the remaining Parmesan cheese and bake for 15-20 minutes until golden brown.
