Required products :

  • 2 tablespoons olive oil
  • 1 onion
  • 2 cloves garlic
  • 2 tablespoons tomato paste
  • 4 carrots
  • 2 stalks of celery
  • 1 potato
  • 6 sprigs of fresh thyme
  • 1/2 head of cabbage
  • 1 teaspoon ditalini paste (short tube pasta)
  • 1 can of white beans
  • 2 teaspoons baby spinach
  • parmesan and toast for serving

Method of preparation :

Cut all the vegetables - onions into small pieces, carrots, celery into slices, and potatoes into medium-sized cubes.

Heat the fat and fry the onion, seasoned with salt and pepper for 10 minutes. Add the garlic (pre-cut it into small pieces), a minute later add the tomato paste and stir.

Add the carrots, celery, potatoes and thyme. Pour 8 cups of water and cook for 10 minutes. You should put the cabbage (chopped) and continue to cook for another 10-12 minutes.

Meanwhile, cook the pasta according to the instructions on the package.

Remove the thyme stalks and add the pasta and beans to the vegetables. Cook for 3 minutes and remove from the heat. Add the spinach and when it softens, serve the stew as desired with grated Parmesan cheese and toast.
