Required products :

  • 1 tablespoon olive oil
  • 2 onions, thinly sliced
  • 1 large clove of garlic, chopped
  • 8 sausages
  • 400 grams of canned chopped tomatoes
  • 2 teaspoons Dijon mustard
  • 1/2 cube chicken or vegetable broth dissolved in 175 milliliters of hot water
  • 420 grams of beans (cooked)
  • 100 grams of spring leafy greens (spinach, dock, nettle), sliced

Method of preparation :

Fry the onion until soft for about 6 minutes, add the garlic and, after slightly changing color, transfer to a plate and set aside.

Slightly increase the temperature of the stove and fry the sausage for 5 minutes until it gets an appetizing brown tan on all sides.

Return the onion and garlic to the pan, add the tomatoes and mustard. Pour the broth and season to taste. Cook for 10 minutes, add the beans and continue cooking for another 5 minutes.

Finally, add the greens, stir and after about 4-5 minutes, when the spring vegetables are melted and the sausage is completely ready, remove the dish from the heat.

If desired, you can serve with mashed potatoes.
