Required products :

6 chicken legs (bottom)
2-3 carrots
2 onions
1 tomato
1-2 sprigs of fresh parsley
1-2 sprigs of fresh basil
3 cloves garlic
50 milliliters of olive oil
spices to taste (hot red pepper, black pepper, sugar, salt, dry oregano, basil, savory)

Method of preparation :

Wash the thighs, remove their skin if you prefer.

Season them with salt, coarsely ground black pepper and dried basil, savory and oregano. Leave for 10-15 minutes.

Steam the tomato, peel it and clean the seeds. Grind in a blender along with the garlic cloves, fresh parsley and basil.

Cut onions into large straws, grate carrots on a medium grater.

Fry the garlic cloves in olive oil.

Once they start to change color, remove them from the fat and put the flavored legs in it.

Fry them over high heat until a yellow crust forms on all sides.

Then add the onion and let it cook until golden, stirring during this time.

Then add the grated carrots, and 4-5 minutes later (once softened) season with salt, pepper and add 1 teaspoon of sugar.

Pour 2 tea cups of boiling water, reduce the heat, close the pan with a lid and let the products simmer for 30 minutes.

When this time has elapsed, add the tomato puree, which you pre-dilute with the required amount of water to make it look like liquid cream. Season to taste, close the container again and leave the dish for another 8-10 minutes on low heat.

Serve hot. You can garnish with mashed potatoes or spicy rice.

Enjoy your meal!
