Clean, wash and boil the livers. Strain them and set aside a tea cup from their broth. In a deep frying pan, fry finely chopped onions, tomatoes, carrots and season with salt, cumin and pepper to taste.
Add the offal, pour the wine, add the bay leaves and spinach. Stew and let the mixture simmer on low heat until cooked. Serve the dish warm, sprinkled with fresh parsley.
