Soak chickpeas in water and use it boil. Strain and set aside. In a saucepan with a lid, heat the butter and fry the onion, bacon, and sausage. Add the tomatoes, pre-peeled, and grated.
Add a pinch of sugar so that the dish does not sour. Season with salt, pepper, paprika, and red wine, add the bay leaf. Peel, wash, dice the potatoes and add to the mixture together with the chickpeas.
Put the lid on, reduce the power of the hob to a minimum, and let the dish simmer on low heat for an hour, an hour and a half. Cool, pour portions, and serve the stew, garnished with fresh parsley.
