Required products :
2 eggplants
2 onions
1-2 tomatoes
garlic
salt and sugar to taste
oil
Method of preparation :
Peel an onion, cut it into cubes and fry until golden in hot oil. Then add the diced tomatoes and a few minutes later the aubergines, cut in the same way.
Season with salt and sugar to taste and let everything simmer for 20-30 minutes.
Once the vegetable combination has cooled, add the crushed garlic cloves and serve.
