Required products :

  • 1 kg of lamb fillet, cut into small pieces
  • 2 tablespoons a mixture of vegetable oil and butter
  • 200 milliliters of water
  • 1-2 tablespoons tomato paste
  • 1 cube meat broth
  • 1 teaspoon cumin
  • 3/4 teaspoon salt
  • a pinch of black pepper
  • 350 grams of onions (3 heads)
  • 200 grams of dates
  • a few almonds if desired
  • fresh coriander and parsley

 

Method of preparation :

Fry the lamb (at room temperature) in the fat until it turns brown. Then transfer it to a container convenient for suffocation.

Pour the water, add the tomato puree, the cube of broth, the spices and the onion, cut into large semicircles.

Let everything simmer over medium heat for about an hour and 15 minutes. Then cut the dates, add them to the other products and let the dish cook for another 15 minutes.

If you decide to use almonds, add them at the end of cooking, before baking them lightly without fat.

Sprinkle the lamb with chopped fresh coriander and parsley. It is recommended to serve it with couscous, as rice is a good alternative.
