Required products :

1 kg onion
300 grams prunes
500 grams tomatoes
1 bunch green onions
300 milliliters vegetable broth
1 tablespoon chopped fresh parsley and other spices of your choice
2 tablespoons butter
3 tablespoons olive oil
2 tablespoons lemon juice
ground black pepper and salt of taste

Preparation :
Put the prunes in a bowl, pour boiling water over them and leave for 15 minutes, then drain the liquid.
Dry the plums, cut in two and remove the stones. Cut the green onions into strips about 3 cm long.
Boil the tomatoes for a minute with boiling water, leave to cool and cut in half. Using a teaspoon, remove the seeds and cut the soft part into small pieces.
Cut the onion into circles and fry it until transparent in olive oil. Then add the butter, prunes, tomatoes, green onions, add salt, pepper and pour the broth.
Put the pan on high heat and bring to a boil, add parsley and reduce the temperature. Allow the vegetables and prunes to simmer until soft.
Put the stewed onions in a suitable container and pour the lemon juice. Prunes will give a sweet taste, and tomatoes - a gentle sour hue.
Instead of prunes you can use dried apricots or figs.
An amazing garnish for fried or roasted meat is obtained.
