How To Cook Stewed Potatoes In Tomatoes And White Wine With Olives And Capers - Recipe

Required products (for 4 servings) :

  • 400 grams of small potatoes
  • 400 grams of canned tomatoes in their own sauce
  • 120 milliliters of dry white wine
  • 120 milliliters of water
  • celery stalk
  • 1 chili pepper
  • 1 red onion
  • 1/2 teaspoon ground red pepper
  • 1/3 teaspoon Italian spices
  • a pinch of sugar
  • black pepper and salt to taste
  • 150 grams of olives (black or green) and capers
  • 2 tablespoons olive oil
  • thyme to sprinkle the finished dish - optional


Method of preparation :

Finely chop the chili pepper, red onion and celery stalk. Stew them until soft in olive oil and then add the spices (red pepper, Italian herbs, black pepper and salt to taste). Cook for about a minute, pour the tomatoes along with their juice, pour the water and wine.

When the liquid boils, put the small potatoes in it and close the container with a lid. Put in the oven for half an hour at 200 degrees, then remove the lid, add the olives and capers and cook the dish for another 15-20 minutes.

Arrange the potatoes on a plate, sprinkle with thyme if desired and serve.
