Required products :

  • 400 grams of sauerkraut
  • 20 grams of dried white mushrooms
  • 300 milliliters of water
  • 1 small carrot
  • 2 bay leaves
  • 3 grains of allspice
  • 4 grains of black pepper
  • 1 onion
  • 1 tablespoon olive oil
  • 3 tablespoons soy sauce and ground black pepper if desired

 

 

Method of preparation :

Wash the mushrooms, fill them with 200 milliliters of warm water and leave for several hours or overnight. Then simmer until cooked through (about 20 minutes).

Drain the broth and save it, cut the mushrooms into small pieces.

Pour the cabbage into a colander, rinse it well with cold water. Cut it into small pieces and place in a suitable container. Pour the mushroom broth, add the bay leaves, allspice and black peppercorns. Let simmer for 10 minutes on high heat, then add the mushrooms.

Grate a carrot with a fine grater, add it to the cabbage and reduce the heat to a minimum.

Close the pan with a lid and let the dish simmer for about 40 minutes (until the cabbage softens), stirring occasionally.

During cooking, the liquid will evaporate, when this happens, pour the remaining 100 milliliters of water.

Finely chop the onion, fry it in olive oil, add the cabbage, stir and let everything simmer for another 10 minutes.

Season with soy sauce and ground black pepper if desired.
