Method of preparation :
Grate the pre-peeled carrots, chop the onion finely and the zucchini (peel it) into small cubes.
Put the latter in a bowl and add salt to taste.
Dissolve the tomato puree in 1/2 teaspoon of water.
Stew the zucchini and onions separately with the carrots in a small amount of oil. The vegetables should turn slightly red.
Then mix them and add the tomato liquid. Stir and simmer the mixture briefly.
At the end of cooking, sprinkle with grated garlic, taste and add salt if necessary.
You can serve the dish both hot and cold.
