Required products :

  • 2 kg of fresh zucchini
  • 500 grams of ripe tomatoes
  • 250 grams of nonfat sour cream
  • 2 onions
  • 1 head of garlic
  • 50 grams of parsley
  • 50 milliliters of olive oil or vegetable oil
  • 1 teaspoon sugar
  • salt, pepper and other spices of your choice

 

Method of preparation :

Peel a squash, grate it and remove all the hard parts. With a sharp knife cut into large pieces (about 3-4 centimeters wide).

Peel and saturate the onion. Wash the tomatoes and cut into pieces about 2 inches wide.

Heat the fat and fry the onion in it until soft. Then add the zucchini and cook them over low heat, stirring constantly, until they release their juice. Then pour the tomatoes, mix them with the remaining vegetables and simmer on high heat for 3 minutes. Reduce heat and season with black pepper (you can add 1 bay leaf). After another 3 minutes, add salt, stirring carefully so as not to damage the shape of the pieces. Leave the mixture in the bowl for 2 minutes, during which peel the garlic and squeeze or chop finely. Cut parsley, mix with garlic and season the dish with the combination of the two spices.

You can add extra salt and serve the dish hot with low-fat sour cream.
