Required products :

  • 3/4 tea cup finely chopped strawberries
  • 1 tablespoon lemon juice
  • 1/2 teaspoon + 1 tablespoon crystal sugar
  • 2 teaspoons flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup soft butter
  • 1/4 tea cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract

for the filling:

  • 4 tablespoons soft cream cheese
  • 3 tablespoons powdered sugar
  • peel of 1 lemon

Method of preparation :

Line 2 baking trays with parchment paper and lightly grease them (you can use cooking spray). Turn on the oven to heat to 175 degrees.

For the dough, combine the strawberries, lemon juice and 1 tablespoon of salt. Leave the fruit to stand for 10 minutes.

In a bowl, mix the flour, salt and baking powder. In another, beat the butter with the remaining sugar until fluffy. Add the egg and vanilla, finally combine with the flour. Finally, add the fruit to the dough and mix gently with a silicone spatula. Set aside.

Stretch a sheet of parchment paper on the counter. Stir in the cream cheese, powdered sugar and lemon zest. Using a spoon, make 12 small balls and spread them on the paper.

Take a spoonful of the dough and spread it on your hands, put 1 ball of the filling in the center and wrap the dough around it. Form 12 cookies, which you arrange in the prepared trays, at a distance between them.

Bake for 18 minutes, until slightly pink.
