Are you looking for an easier and more useful way to serve eggplants? We present you just such an option - stuffed eggplant with bulgur, tender hummus and a variety of vegetables. The dish is suitable for both vegetarians and people who are fasting, or for those who want to include a more varied and healthy dishes in their menu.

Required products :

  • 2 eggplants
  • 1 1/3 tea cup vegetable broth
  • 3/4 teaspoon bulgur
  • 1/2 teaspoon cumin
  • 3 cloves garlic
  • 1 lemon
  • 1/4 teaspoon hummus
  • 2 tablespoons olive oil
  • 1/4 cup pitted Kalamata olives
  • 1/2 teaspoon chopped tomatoes
  • 1/4 teaspoon parsley
  • 1/4 tea cup feta cheese

Method of preparation :

Wash the aubergines and cut them lengthwise. Add salt and leave for 15 minutes to squeeze the bitter juice. Dry them and spread them with a little olive oil.

Put the bulgur, cumin, press the garlic cloves in a saucepan (or slow cooker). Cover with vegetable broth and bring to a boil on low heat until done.

Bake the aubergines "face down" until completely soft (if cooking them in a slow cooker, turn them on a low heat program for 6 hours).

In a bowl, mix the hummus, finely chopped olives, tomatoes and parsley, along with the bulgur, and combine.

Make furrows with a fork in the fleshy part of the eggplant and place the bulgur mixture in them.

Sprinkle with feta cheese and serve with a few slices of lemon.
