Necessary products:

 

  • 1 kg of eggplant
  • 2 onions
  • 50 grams of chopped green olives
  • 400 grams of boiled bulgur
  • 100 grams of ground almonds
  • 2 cloves garlic, finely chopped
  • 1 finely chopped soft tomato
  • 50 grams of sliced ​​almonds
  • a few fresh coriander leaves
  • 20 grams of butter and olive oil for spreading

 

for the sauce

 

  • 2 tablespoons strained yogurt
  • 1 tablespoon mayonnaise
  • juice of half a lemon
  • left

 

Method of preparation:

 

Wash, dry and cut the aubergines in half. Remove the flesh with a spoon and cut it into small pieces. Add salt to the vegetables and arrange them in a pan greased with olive oil. Heat butter in a pan, fry the finely chopped onion and the flesh of the aubergines.

Add the finely chopped green olives and add the almonds and bulgur. Season the stuffing with garlic, tomato, chopped coriander and stew for 10 minutes. Cool and fill the aubergines. Preheat the oven to 200 degrees, pour 1 teaspoon of water into the pan and bake for 30-35 minutes.

Meanwhile, prepare the sauce by mixing all the ingredients and stirring until smooth. When ready, cool the dish, pour into plates and serve, garnished with milk sauce and sliced ​​almonds.
