How To Cook Stuffed Aubergines With Minced Meat And Rice - Recipe

Required products :

1 eggplant

1/2 head onion

100 grams of minced meat

1 egg

1 tablespoon rice

2 tablespoons oil

30 grams of yellow cheese

salt and pepper to taste

Method of preparation :

Cut the eggplant in half lengthwise, make incisions as in the picture.

 

Heat 1 tablespoon of the oil in a pan and fry the cut surface until soft.

Finely chop the onion and fry it in the same fat together with the minced meat. Boil the rice. Mix and season. Add the egg and stir.

Carve the inside of the aubergines with a spoon.

Put the aubergines in a greased pan and fill them with the resulting mixture. Sprinkle with grated yellow cheese and bake in a preheated oven for about 20 - 25 minutes.

 

The result is a wonderful golden appetizer, which is equally delicious both hot and cold.
