How To Cook Stuffed Eggplant With Quinoa And Walnuts - Recipe

Necessary products:

 

  • 2 eggplants
  • 2 tablespoons olive oil
  • 1 cup quinoa
  • 1/2 cup chopped fresh parsley
  • 1/3 crushed walnuts
  • 2 stalks chopped fresh onion
  • salt, pepper, lemon juice
  • 1 lemon, cut into quarters
  • 1 teaspoon hot red pepper
  • 50 milliliters of white wine

 

Method of preparation:

 

Peel and cut the aubergines in half. Remove their flesh with a spoon and add salt. Wash the quinoa, put it in a saucepan, pour the wine, water about 2 teaspoons and boil it.

Strain and place in a bowl, add the ground walnuts, parsley, onion, lemon juice, hot pepper. Heat olive oil, fry the fresh onions and add the quinoa. After 5 minutes, remove from the heat and fill the aubergines with the filling.

Put them in a greased pan, pour 100 milliliters of water and preheat the oven to 200 degrees. Bake for 30 minutes. Divide portions and serve the dish, garnished with lemon slices and fresh parsley.
