How To Cook Stuffed Eggplant With Vegetables And Cheese - Recipe

Learn how to cook "Stuffed eggplants with vegetables and yellow cheese". Delicious recipe.

Required products :

  • 500 grams of eggplant (2 pieces)
  • 100 grams of tomatoes
  • 3-4 cloves of garlic
  • 30 grams of onions
  • 30-40 grams of yellow cheese
  • a piece of sweet pepper with a color of your choice
  • 3-4 tablespoons tomato sauce or ketchup
  • 2 tablespoons oil
  • a little mayonnaise if desired
  • black pepper (ground) and salt

 

Method of preparation :

Peel the aubergines (optional), cut the vegetables lengthwise into two parts, cut off the rounded bottoms to keep the "boats" stable.

 

Make shallow incisions in the surface.

 

Cut the tomatoes into cubes (small).

 

Do the same with the onion, the piece of pepper and the eggplant cuttings.

 

Mix the vegetables, pour the oil and some of the tomato sauce, season and stir.

 

Spread the aubergines with the remaining tomato sauce or use ketchup.

 

Spread the filling on it.

 

Sprinkle with yellow cheese (grated in advance).

 

Arrange the aubergines in a suitable container and pour a little mayonnaise, if you prefer.

 

Pour 1/3 tea cup of water into the pan and place the dish in the oven at medium temperature.

After about 30-35 minutes you can serve the dish as a main course or as a side dish to meat or fish.
