Boil the eggs hard. Using a sharp knife, cut them in half lengthwise and carefully remove the shells, trying to keep them intact.
Remove the yolk from the egg white using a teaspoon (be very careful). Then grate the two parts of the eggs, yellow cheese and mix them in a bowl. Add the chopped green onion feathers, sour cream (or replace with thick yogurt), season to taste.
Mix the ingredients and distribute the filling in the egg "bowls" and sprinkle with almond leaves, pressing them lightly.
Heat the butter in a pan and fry the eggs in it, placing them with the filling down.
After about 3 minutes the almonds will be nicely reddened and you can serve the appetizer by sprinkling it with fresh parsley leaves.
