Required products :

  • 9 eggs
  • 500 grams of spinach
  • 1 onion
  • 2 medium sized tomatoes
  • 1 teaspoon capers
  • parsley to taste
  • nutmeg to taste
  • butter and olive oil to taste
  • black pepper to taste

 

Method of preparation :

Boil the eggs hard, peel them and cut in half lengthwise. Remove the yolks and mash them until smooth with a few tablespoons of olive oil.

Finely chop onions, tomatoes, capers and parsley.

Fry onions for 3-4 minutes in a mixture of 1 tablespoon olive oil and 1 tablespoon butter. Add the tomatoes, cook them for a quarter of an hour on medium heat.

Wash the spinach, remove the stems and put the leaves in a saucepan with salted water for 5 minutes on low heat. Then drain the spinach by pouring it into a colander. Once the water has drained, fry the leaves in 1 tablespoon of oil over medium heat for about 5 minutes (until the liquid evaporates). Then add parsley, capers and nutmeg (quantities are to taste), stir and remove the pan from the heat.

Using a blender, mix the egg yolks with the tomatoes and spinach, season, and fill the egg whites with this combination.

Arrange in a pan, pour 3 tablespoons of water in it, put a little butter, cut into cubes.

Bake the eggs for 20 minutes at 170 degrees and serve warm.
