How To Cook Stuffed Mushrooms With Artichoke And Parmesan - Recipe

Required products :

  • 24 medium-sized mushrooms
  • 4 teaspoons extra virgin olive oil
  • 1 small onion, chopped
  • 2 cloves garlic
  • 1/2 cup marinated artichokes, drained and cut into cubes
  • 3 tablespoons breadcrumbs
  • 2 tablespoons parmesan
  • 2 tablespoons mayonnaise
  • dried thyme, salt and pepper to taste

Method of preparation :

Place the grill in the upper third of the oven, preheat to 200 degrees and grease a pan.

Remove and finely chop the mushroom stumps. Heat 1 teaspoon of olive oil and fry the stumps, onions and garlic for about 5 minutes or until the liquid evaporates. Combine with artichoke, 2 tablespoons breadcrumbs, parmesan, mayonnaise and thyme.

Season the mushroom caps with 2 teaspoons of olive oil, salt and pepper. Fill each mushroom with the artichoke filling and arrange in the pan. Combine the remaining 1 tablespoon breadcrumbs and 1 teaspoon olive oil and sprinkle over the mushrooms.

Bake for 15-20 minutes or until the mushrooms are soft and the breadcrumbs are golden.

Serve as an appetizer or with crackers if desired.
