Required products :

  • 2 large cambs, cut in half and cleaned of seeds
  • 1 teaspoon cumin
  • 1 teaspoon coriander powder
  • 400 grams of canned tomatoes (chopped)
  • 1 red onion, cut into thin crescents
  • 1 clove of garlic, grated
  • 1 hot pepper, finely chopped
  • 1 small eggplant, cut into cubes
  • 220 grams of canned beans (with liquid)
  • small bunch coriander (or parsley), chopped
  • 1 large egg
  • 25 grams of grated cheese (feta)
  • 50 grams of fresh cheese

Method of preparation :

Roast the peppers with the cut side down for about 15-20 minutes at 190 degrees.

Heat a frying pan and put the spices in it to release its aroma. Add the tomatoes and onions, garlic, hot peppers, eggplant and beans, along with the canned juice (if using a large 400 gram can, add half the juice). Cover the pan and simmer for 20 minutes, stirring often, without adding water. Finally add the coriander to the mixture.

Beat the egg and mix with both types of cheese.

Turn the peppers over and fill them with the vegetable mixture as tightly as possible. Cover with egg and cheese. Bake for 10 minutes.

Serve with salad and slices of lime.
