Required products :

2 sweet red peppers for stuffing
4 medium potatoes
1 onion
2 cloves garlic
4 eggs
3-4 feathers green onion
3 tablespoons olive
salt, pepper to taste
lettuce leaves

Method of preparation :

Wash the peppers, cut them in half lengthwise and remove the seeds. Season each half with salt and pepper, sprinkle with olive oil.
Arrange them in a pan and bake in a preheated oven at 180 degrees for 15 minutes.

Peel the garlic and onion, chop finely. Peel the potatoes as well, cut them into thin circles and fry until semi-finished, stirring.

Remove the peppers from the oven, fill them with potatoes and return to bake for another 20 minutes. Then beat one egg in each half and put back in the oven, this time for 5-10 minutes (depending on the desired readiness of the eggs).

Before serving, put lettuce on the leaves, season with salt and ground black pepper to taste and sprinkle with chopped green onions.
