How To Cook Stuffed Peppers With Vegetables And Pumpkin Sauce - Recipe

Necessary products:

 

  • 3-4 peppers
  • 100 grams of cooked rice
  • 150 grams of black canned beans
  • 1 onion, finely chopped
  • 1 teaspoon finely chopped tomatoes
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon red and black pepper
  • salt and lemon juice to taste
  • 100 grams of canned corn
  • 1 avocado, finely chopped
  • 300 grams of boiled pumpkin
  • 80 milliliters of milk
  • a pinch of cinnamon
  • 50 grams of finely grated yellow cheese

 

Method of preparation:

 

Peel the peppers and cut them in half. Arrange in a greased pan. Heat olive oil in a pan and fry onions, rice and beans. Add the corn, tomatoes, chili, cumin, red, black pepper, salt and lemon juice.

Stir and add the avocado. Cook over low heat for 10-15 minutes and cool the filling. Fill the peppers with it and sprinkle with yellow cheese. Put the pumpkin, cinnamon and milk in a blender.

 

Beat the mixture until puree and spread it on each pepper with a spoon. Preheat oven to 190 degrees and bake for 30-35 minutes. Cool, arrange the dish on a plate and serve.
