Required products :

  • 18 quail eggs
  • 1/2 avocado
  • 1 tablespoon mayonnaise
  • 1 teaspoon sour cream
  • 1 teaspoon mustard
  • 1 teaspoon lemon juice
  • salt to taste
  • ground red pepper and green onions for decoration


Method of preparation :

Boil the eggs for 10 minutes after boiling the water. Then put them in the cold to cool completely. This will also help you peel them more easily. When you remove the shells, cut the eggs in half.

Remove the yolks to a bowl, add the flesh of the avocado, mayonnaise, cream, mustard, salt and pour the lemon juice.

Mash the products with a fork until the mixture is homogeneous (you can use a blender or blender).
