Ingredients :
1 tablespoon olive oil

  • 4 red onions, with the top cut off and peeled
  • 90 grams of bulgur
  • 100 grams of grated celery
  • 20 grams of crushed walnuts
  • 20 grams of dried cranberries
  • 60 grams of finely chopped kale or spinach
  • 2 tablespoons parsley
  • 1 tablespoon sour cream
  • 25 grams of crushed blue cheese
  • 120 grams of green beans or peas

Method of preparation :

Preheat oven to 200 degrees.

Grease a pan and put the onion heads. Bake them under foil for 35-40 minutes until soft.

Meanwhile, boil the bulgur as mentioned on the package.

Remove the onion from the oven and carefully carve the inside to make a basket. Saturate the removed filling and fry it in a pan in 1 tablespoon of olive oil for about 5 minutes.

Add the walnuts, kale and blueberries. After two minutes, add the bulgur, parsley, cheese and cream, stir and salt.

Fill the bowls of the onion heads with the resulting stuffing and bake for 10-15 minutes until a crispy crust is obtained.
