Wash and dry the peppers. In a pan, heat olive oil and fry the chopped onion and minced meat. Finely chop it with a wire whisk. Add the tomatoes, pasta, oregano, basil and parsley, finely chopped.
Stir and simmer the sauce over low heat until done. Cool it, scoop 1-2 tablespoons of it, put them in the peppers, garnish with a circle of cheese and continue in the same way. Finish by sprinkling with grated mozzarella.
Arrange the vegetables in a greased pan and bake in a preheated 200 degree oven for 30 minutes. Serve the peppers sprinkled with freshly chopped green spices of your choice.
